10 days of Whole30 and Not So Chicken Soup

Sorry folks.  If you came by today to see my newest eye opening, mouth watering, lip smacking good recipe, you are in for a disappointment.  I do have a recipe to post, but it is just an easy to throw together old comfort food that is perfect for when you are sick...  It's called...

Wait for it....  wait for it....  (can you feel the suspense building?)

Not So Chicken Soup
 

What, you were expecting something awe inspiring? 

Well this was the best my tucked into bed, nose running, cotton stuffed brain could come up with.  And I have my hubby to thank for it all (the sickness portion that is).

The last four days have been filled with lots of tissues, some cold and flu medicine, and easy comfort foods (but still Whole30 compliant).  Stefan started off with it and spent 2 days on the couch with me taking care of him.

Men are such babies when they are sick.  But that is a whole nother topic.

The he decided to be kind and share his germs with me, so I spent yesterday and probably will spend the majority of today on the couch.  Unfortunately, I didn't get taken care of while I was sick, I had to cook my own breakfast, though he did help with that, and dinner for myself and my little one while Stefan went to a birthday party for our fellow Spartan Paul (one of these days I have to blog about his journey, it has been amazing and is a true testament to the Paleo way).

So since I was sick, dinner had to be quick, easy, comforting and, hopefully, use up some leftovers I had in the fridge.  What I came up with was what everyone recommends for those who are sick,  And it was everything I could have wanted it to be.  Comforting, easy and on the table in less than 30 mins start to finish.

Not So Chicken Soup

  • 2 Cups Leftover Rabbit (chopped)
  • 6 Cups Chicken Broth (I made some from scratch but from a can is fine as well)
  • 1 large or 2 small Carrots
  • 2 Stalks Celery
  • 1 Large Onion
  • 1 1/2 Tbsp Garlic
  • 1 1/2 Tbsp Salt (reduce to 1/2 Tbsp if using canned broth)
  • 1 Tbsp Dried Basil
  • 1 Bay leaf
  • 1 Tbsp Thyme

Roughly chop all vegetables. 

Throw all ingredients in a large pot and put over high heat. 

Once it comes to a boil, reduce temperature to low, cover and simmer for 30 mins or so.  Taste and adjust seasonings to your preference. 


NOTE:  You can also substitute chicken for the rabbit.  Chicken is what I normally use for this, but I had rabbit leftover from the grilling experiment earlier in the week, so that's what I used.

WHOLE30 UPDATE:

It has now been 10 days since I started the ubber strict Whole30 program.  I must say it has been easier to stick to than I thought it would be, and it has really begun to open my eyes to how bad I used to feel when not eating clean.  My body has started to adjust to this new way of eating, and I don't find myself starving every minute of the day anymore.  I also found it really easy to stick to even when I was sick (which is a huge thing for me since I usually don't even think about what is going in my mouth when I don't feel well).  Of course I have had a few cravings, specially when visiting this blog and seeing all the delectable sweets recipes, but for the most part my constant sugar cravings are gone.  I will be happy when it is over so I can indulge a bit in some dark chocolate and a couple other "off limits" items, but that's only 20 days away!
