My Journey to Whole30 (and a recipe)

It seems that everytime I take 2 steps forward I then sabatoge myself and end up taking one step back. And, while this is very frustrating at times, I am proud of myself for getting right back on the Paleo wagon when I fall off. As proud as I am of myself though, I don't want to keep getting into this cycle of Paleo, not Paleo, Paleo, not Paleo. To me it feels a bit like a yo-yo diet cycle and we all know how unhealthy that is.

So my next question that I pose to myself is why do I do this and how can I stop.  I think I figured out an answer to this question earlier this week.

I had been doing really well on Paleo for a week or more and then came a Cinco de Mayo celebration at a friends house. While I could have made the decision to only eat the Paleo stuff (and yes I cooked a couple of paleo dishes but both were major failures... more on this later) I decided to just go with the flow and eat what everyone else was eating. I figured I could just get right back up on Paleo the next meal and everything would be fine. Well let me tell you, I was so totally wrong. It took me two more days to get back on track. Now, I didn't eat horibbly the other days, but it certainly wasn't Paleo approved.

So with the evidence in and some thought about the events and how I felt and la di da di da, I have discovered this about myself..... I can't cheat. If I do, I lose all motivation for a few days. If I stick with Paleo I am fine, otherwise I am a walking stomach that wants to eat any sugary, fatty thing I see... and then I want to throw up because I feel like crap. And then I tell myself this is what I get for being stupid and not caring about myself enough to eat right. And then I get all angry and want to lash out at myself for being stupid in the first place... and you can see where this is going.

So solution time... Whole30.

For those of you who do not know what this is, it is a 30 day challange where you are very, VERY strictly paleo. This means no sugar, no honey, no nut or coconut flours.. nothing but whole foods and spices for 30 days. Sound tough? It is a bit difficult, I only made it 1 week the last time I tried. This time though, I am serious. I need this. It's almost a matter of life and death. Not really, but it is a matter of me getting control of my eating habits and my sugar tooth once and for all. I figure if I can stick with it for thirty days then I will have madea huge dent in changing my behavior patterns. This should allow me to find normal ol' 80/20 Paleo so easy and fun and exciting that I don't ever want to stray from it again. Oh, and BONUS, I might actually lose some weight and keep a New Years resolution for once.

So, I promised you a recipe, and since you have all been good blog followers and made it through this long post I will reward you with that recipe now. I present to you, Island Chicken Salad

Island Chicken Salad

  • 2 oz chicken (precooked)
  • 2 cups romaine (cut up)
  • 1 mango (very ripe and chopped)
  • 1 oz salami (diced)
  • 2 pieces jarred jalapeno (diced)
  • ¼ orange pepper (chopped)
  • 1-2 Tbsp Zingy Island Dressing (see recipe below)

Heat a medium frying pan over medium heat. Add in your salami and cook until almost crispy. Then add in your orange pepper, red onion, jalapeno and cook about 3-4 minutes until onion is translucent (If you would like your chicken warm you can add it in this step as well). While that is cooking, place lettuce in a medium bowl or on a medium plate, then top with mango. After the salami mixture is done, place that on top of the mango and top with chicken (if you didn’t heat it in the pan with the salami). To finish it off, drizzle 1-2 tbsp (depending on how “wet” you like your salad) of the dressing on top and enjoy!


Zingy Island Dressing
  • 2 tbsp “Drizzle” (or mayo)
  • Pinch garlic powder
  • Pich cayaene pepper
  • Pinch of adobo seasoning
  • Splash of lime juice (add a touch more if using real mayo)

Mix together and drizzle over salad.

Makes 1 salad
